Walnut Pesto Turkey Sandwich Recipe

( Serves 4 )
1/4 cup walnuts
4 whole garlic cloves
5 cup fresh basil leaves
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 cup olive oil
1 cup Parmesan (freshly grated)
4 whole sourdough rolls (or a long baguette)
1 pound roasted turkey (sliced thin)
3 whole tomatoes (sliced)
12 slices fresh mozzarella
  1. In a food processor, blend together walnuts, garlic, basil, salt, pepper, olive oil, and parmesan until mixture is smooth.
  2. Cut rolls in half and layer with pesto, turkey, tomatoes, and mozzarella.
  3. Serve.
