Chocolate Chia Seed Pudding Recipe

( Serves 4 )
1 cup Greek yogurt
1 cup unsweetened almond milk
3 tablespoon pure maple syrup (grade A or B)
1 teaspoon pure vanilla extract
3 tablespoon unsweetened cocoa powder
1/4 cup chia seeds
1 pinch sea salt
1 cup sliced strawberries (optional)
4 tablespoon shaved chocolate (optional)
  1. Combine Greek yogurt, almond milk, maple syrup, and vanilla in a medium bowl. Use a whisk to stir the ingredients until they're well combined.
  2. Add cocoa powder to yogurt mixture - 1 tablespoon at a time - and slowly whisk until all of the powder has been worked into the pudding.
  3. Pour chia seeds and salt into the pudding and whisk to combine. Cover mixture with a lid or plastic wrap and store in refrigerator to chill. After about 30 minutes, go back and check on the pudding, using a whisk to redistribute the seeds that have settled to the bottom. Re-cover pudding and chill overnight. (The pudding can be eaten the next morning, or can be chilled for up to 4 days before serving)
  4. When ready to serve, divide pudding among 4 bowls and top with strawberries and shaved chocolate (optional).
